Harvest Squash Dish

Roasted butternut squash, brussels sprouts, sweet apples, and crunchy pecans come together with the earthy richness of Olive Amelia’s Mushroom & Sage Olive Oil for a cozy, colorful side that’s perfect for any fall table.

Ingredients:

  • 2 c. fresh diced butternut squash
  • 1 c. brussel sprouts
  • Halved whole garlic cloves
  • 3 Tbsp. Olive Amelia's Mushroom & Sage Olive Oil
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
  • 1/2 tsp. cinnamon
  • 3/4 c. pecans
  • 2 Fuji apples, peeled and thinly sliced
  • 2 Tbsp. honey

Instructions:

  1. Preheat oven to 425 F.
  2. Combine squash, brussel sprouts, olive oil, salt, pepper, and cinnamon until evenly coated.
  3. Spread mixture in single layer on baking sheet, bake for 10 minutes.
  4. While baking, peel the apples and thinly slice.
  5. Remove pan from oven and add the apples, garlic cloves, and pecans.
  6. Bake 15 more minutes or until softened.
  7. Transfer mixture to serving platter, drizzle with honey.
