Ingredients

Salad

  • 3 small red beets, peeled and cut into 6 wedges each
  • 3 small golden beets, peeled
  • 4–5 c. of mixed greens
  • 1 blood orange, peel removed and sliced into rounds
  • 2 Valencia oranges, peel removed and sliced thin
  • 1 ruby red grapefruit, peel removed and sliced thin
  • 1 fennel bulb, shaved thin
  • 2–3 Tbsp. of microgreens (optional but beautiful)
  • 2–3 Tbsp. pistachios, coarsely chopped
  • ¼ c. Olive Amelia’s Orange Olive Oil (for roasting the beets)

Dressing

Directions

  1. Preheat your oven to 400°F. Toss the red and golden beets with ¼ cup of the navel orange olive oil and spread them on a foil-lined baking sheet. Roast for about 45 minutes, or until the beets are tender when pierced with a fork. Let them cool before assembling the salad.
  2. While the beets are roasting, slice your oranges and grapefruit into thin, elegant rounds. Shave the fennel as thinly as possible using a mandoline or sharp knife.
  3. In a small bowl, whisk together the remaining ½ cup navel orange olive oil, grapefruit white balsamic vinegar, salt, and pepper. Set aside.
  4. On a large platter or bowl, layer the mixed greens, roasted beets, citrus slices, and shaved fennel. Drizzle with the citrus vinaigrette. Top it off with chopped pistachios and a sprinkle of microgreens for a final touch of flair.

Serving Suggestions

This salad makes a gorgeous first course or a light lunch on its own. For a more substantial meal, pair it with grilled salmon or a slice of crusty bread and soft cheese.
