  1. Mash the garlic clove into a smooth paste using a mortar and pestle.

  2. In a small bowl, whisk together the egg yolk, Sicilian Lemon Balsamic, and dry mustard until frothy.

  3. Begin adding 1 tablespoon of olive oil very slowly—just ¼ teaspoon at a time—whisking thoroughly after each addition.

  4. Once the mixture begins to thicken, continue drizzling in the remaining olive oil in a slow, steady stream while whisking constantly until the aioli is thick and creamy.

  5. Finish by seasoning with a pinch of flaky sea salt to taste.
