Waldorf Chicken Salad

Indulge in a timeless favorite with a fresh twist—this Waldorf Chicken Salad is a delightful medley of tender chicken, crisp apples, juicy grapes, crunchy walnuts, and celery, all tossed in a creamy dressing made with tangy Olive Amelia Lemon Olive Oil. Perfect for picnics, lunches, or a light, flavorful dinner.

Ingredients:

  • 1½ c. rotisserie chicken, chopped

  • 2 Tbsp. Olive Amelia Lemon Olive Oil

  • ¾ c. plain Greek yogurt

  • 1 Tbsp. mustard

  • 1 c. green onion, thinly sliced

  • 2 apples, julienned

  • ½ c. celery, thinly sliced

  • 1 c. walnuts or pecans, chopped and lightly toasted

  • ½ c. green grapes, sliced

  • 1 Tbsp. fresh parsley, chopped

  • Pink Himalayan sea salt, fresh cracked pepper, and a dash of garlic powder, to taste

Instructions:

  1. In a small bowl, whisk together Greek yogurt, Lemon Olive Oil, mustard, and seasonings until smooth.
  2. In a large bowl, combine chopped chicken, grapes, apples, celery, green onions, parsley, and nuts.
  3. Pour the yogurt dressing over the chicken mixture and stir gently until everything is well coated.
  4. Refrigerate for at least 1 hour to allow the flavors to meld.

Serve on a croissant roll, over mixed greens or whole wheat crackers.
