Green Goddess Dressing

Creamy, herb-packed, and bursting with fresh flavor—this Green Goddess Dressing is a delicious way to elevate salads, grilled veggies, or even use as a dip. Made with Olive Amelia Extra Virgin Olive Oil and Red Wine Vinegar, it’s wholesome, vibrant, and easy to make.

Ingredients:

  • ½ c. plain yogurt

  • ¼ c. Olive Amelia Extra Virgin Olive Oil

  • ½ of an avocado

  • 1 Tbsp. Olive Amelia Red Wine Vinegar

  • 1 Tbsp. lime juice

  • 1 c. packed fresh baby spinach

  • ¼ c. fresh chives

  • ¼ c. fresh parsley

  • 3 green onions, trimmed (greens and white parts)

  • 2 garlic cloves

  • ¼ c. fresh basil leaves

  • 1 tsp. salt

  • Ground black pepper, to taste

Instructions:

  1. Place yogurt, Extra Virgin Olive Oil, avocado, Red Wine Vinegar, lime juice, spinach, chives, parsley, green onions, garlic, basil, and salt into a food processor or blender.

  2. Cover and pulse 3–4 times, or until the ingredients are finely chopped and well combined. If the dressing is too thick, add water 1 teaspoon at a time until desired consistency is reached.

  3. Remove from the blender and season with freshly ground black pepper. Transfer to an airtight container and refrigerate until ready to serve.
