Ingredients:

½ lb cooked, peeled, deveined shrimp, chopped

½ tsp. Olive Amelia's Mango Balsamic Vinegar

2 Tbsp. Olive Amelia's Persian Lime Olive Oil
- 8-10 medium basil leaves, chopped

2 tsp. fresh ginger, grated
- ½ mango, finely diced
- 1½ Tbsp. lime juice
- fresh pepper to taste
- ¼ tsp. salt
- 24 endive Leaves (about 3 small heads)
Instructions:

Gently remove endive leaves, rinse, and pat dry. Set aside.

In a medium bowl, combine shrimp, Mango Balsamic, Persian Lime Olive Oil, basil, ginger, diced mango, lime juice, salt, and pepper. Mix gently until well combined.
