1 whole boneless pork loin (4–6 lbs)

1 Tbsp. Olive Amelia Toasted Sesame Oil

½ c. Olive Amelia Maple Balsamic Vinegar (plus extra for basting)

10–12 slices smoked bacon

Salt Sisters Everyday Seasoning Salt, to taste
Instructions:

Preheat oven to 375°F (190°C).

In a small bowl, whisk together Maple Champagne Mustard, Toasted Sesame Oil, Bourbon Barrel Worcestershire Sauce, and Maple Balsamic Vinegar to create the glaze.

Pat the pork loin dry with paper towels. Season generously with Everyday Seasoning Salt.

Place the pork in a roasting pan. Pour half of the glaze over the loin and rub it evenly over the surface.

Wrap the pork completely with bacon slices, overlapping slightly to ensure full coverage. Pour the remaining glaze over the top.

Cover the roasting pan with foil and bake for 1 hour.

Remove the foil. Baste the pork with pan drippings and an extra drizzle of Maple Balsamic. Re-cover with foil and roast for an additional 30 minutes.

Uncover the pork, baste again, and roast for 20 more minutes until the bacon is browned and crispy. For extra crispness, broil for 2–3 minutes, watching carefully to avoid burning.
