Ingredients:
- 2 beefsteak tomatoes, cut into wedges
- 1 peach, diced (about 1 cup)
- 1 cup fresh corn kernels (from 2 small ears or 1 large)
- ¼ tsp kosher salt
- ¼ cup Olive Amelia Peach Balsamic Vinegar
- ¼ cup Olive Amelia Basil Olive Oil
- 2 oz feta cheese, crumbled (about ½ cup)
- ¼ tsp black pepper
Directions:

In a medium bowl, combine tomatoes, peach, and corn. Sprinkle with salt.

In a separate bowl, whisk peach balsamic and basil olive oil until smooth.
