A simple steak made a little more special. New York Strip is grilled over live fire and finished with melted Asher Blue crumbled right on top, so the cheese does the work of a sauce without any extra fuss.

Ingredients:
- 1 best quality New York Strip steak
- 1.5 oz Asher Blue cheese, crumbled
- 1 tablespoon grapeseed oil
- Optional: french fries or a baked potato, for serving
Instructions:
- Heat your grill to medium-high. Season the steak lightly with salt and freshly ground pepper, keeping in mind the blue cheese will add its own saltiness later.
- Once the grill is ready, brush a light coating of grapeseed oil over both the steak and the grill grates. This helps build a good crust and keeps the steak from sticking.
- Place the steak on the grill and cook the first side for 1 to 2 minutes, then flip. Repeat this process, working in some time on the sides to caramelize the fat.
- When the steak is about 85% of the way to your desired doneness, scatter the Asher Blue on top. Close the grill's vents and lid and let it sit until the cheese melts, about 5 minutes.
- Remove the steak from the grill and let it rest at least 5 minutes before slicing. Longer is better if you have the time.
TIP: We know the rule is to flip a steak only once, but we love breaking it. Oiling the exterior helps the crust pick up more smoke from the grill, and flipping often actually helps control the cooking temperature. The result is a more even crust, more even cooking, and better flavor overall when working with wood or charcoal.
