Watermelon Salad with Basil Lychee Vinaigrette

Light, refreshing, and bursting with vibrant flavor, this watermelon salad combines sweet fruit, crisp vegetables, creamy goat cheese, and a bright, aromatic vinaigrette made with Olive Amelia Basil Olive Oil and Kaimana Lychee White Balsamic. It's the perfect summer dish—fresh, colorful, and ready in minutes.

Ingredients:

For the Vinaigrette:

For the Salad:

  • ¼ c. fresh parsley, chopped

  • 8 c. watermelon, cubed

  • ¼ c. Muffaletta Italian Mix

  • ¼ c. red onion, thinly sliced

  • ½ c. goat cheese

  • 1 English cucumber, thinly sliced and halved

Instructions:

  1. In a large bowl, whisk together the Basil Olive Oil, Kaimana Lychee Balsamic, lemon juice, pepper, and Sel Gris salt to make the vinaigrette.

  2. Add the watermelon, parsley, Muffaletta mix, red onion, cucumber, and goat cheese to the bowl.

  3. Gently toss until everything is evenly coated in the vinaigrette.

  4. Serve immediately and enjoy!
