Middle Eastern Chickpea Salad

Ingredients:

  • 2 bell peppers, chopped

  • 1 (15 oz.) can chickpeas, rinsed and drained

  • 1 cucumber, quartered

  • 1 garlic clove, minced

  • 1 large tomato, diced

  • ½ red onion, thinly sliced

  • Zest and juice of 3 lemons

  • ¼ c. fresh mint, chopped

  • ¼ c. parsley, chopped

  • 5 scallions, thinly sliced

  • 2 tsp. Olive Amelia Basil Olive Oil

  • ½ tsp. freshly cracked black pepper

  • 1 tsp. kosher salt

  • ½ c. Olive Amelia Extra Virgin Olive Oil

  • ¾ c. feta cheese, crumbled

Instructions:

  1. In a large bowl, combine bell peppers, chickpeas, cucumber, garlic, tomato, red onion, lemon zest and juice, mint, parsley, scallions, Basil Olive Oil, black pepper, salt, and Extra Virgin Olive Oil.

  2. Toss gently to combine.

  3. Fold in crumbled feta and give one final toss.
