Watermelon Salad with Basil Lychee Vinaigrette

- 2 tsp. Pepper
- 1 tbsp. Lemon Juice
- 1/4 cup Olive Amelia Basil Olive Oil
- 2 tsp. Green Bamboo Ka’nani Hawaiian Sea Salt
- 3 tbsp. Olive Amelia Kaimana Lychee White Balsamic Vinegar
- 1/4 cup Fresh Parsley
- 8 cups Watermelon, cubed
- 1/4 cup Muffaletta Italian Mix
- 1/4 cup Red Onion, thinly sliced
- 1/2 cup Cotton Cloud Goat Cheese
- 1 English Cucumber, thinly sliced & halved
- In a large bowl, whisk together the vinaigrette ingredients.
- To the large bowl, add in all of the salad ingredients.
